Curried Lamburgers with Manchego cheese

1 lb. ground lamb (not lean)
1/4 cup fine bread crumbs
1 egg
1/2 tsp ground coriander
1 tsp garam masala powder (electric orange variety)
3 shallots, minced
salt & pepper to taste

4 whole wheat hamburger buns
1/4lb 6-month Manchego cheese, sliced thick
1/4 head Boston lettuce, torn
1 medium-size tomato, sliced thick

Preheat grill to medium-high heat. Begin by mincing the shallots in to 1/4" pieces. Add lamb, bread crumbs, egg, coriander, masala, and shallots to a mixing bowl. Season to taste, mix by hand. Wash that hand again, as masala powder will give you a really bad fake tan. Press mixture in to firm, 1/4lb patties. Grill patties 2 minutes each side for medium rare, 3 for medium-well, topping with slices of Manchego for the final minute of grilling. If desired, heat buns on the upper grill rack. Place patties on buns, add lettuce and tomato. Serve immediately. A simple salsa with cilantro and garlic can be prepared as a condiment.

Can you eat goat? I actually like a lot of goat dishes, the same flavor with a lot more texture.
