Dammit, why do some Chinese restaurants serve "Shrimp in Lobster Sauce" as shrimp with a delicious black bean/egg white sauce, and some as shrimp in pasty egg drop soup with undercooked carrots and peas? With the black beans it's likely my favorite Chinese dish, the other I despise. Is it a regional thing?

Ask yourself this: How many Chinese resturaunts actually have any Chinese cooks working for them? Almost none do, in fact. Usually they're all Korean, of Thai, or Phillipino, or Vietnamese, or pretty much anything but Chinese. So most Chinese food isn't even Chinese food at all - it's just the local regional food from wherever they came from renamed & sort of redressed to look like Chinese food.
